Too Hot to Cook, But That’s Okay Because We Have Tomatoes
It is August and it is too hot and I am grumpy and my brain is not working efficiently. Thankfully, it is my second favorite season- tomato season! We got a couple ears of corn, as well. The hens are laying eggs like it is their job. Which it is, so that works out well.

The great thing about tomatoes is that they can make dinner a non-cooking event. Just watch-





Chop some fresh basil and some tomatoes. Season to taste with salt, pepper, olive oil, and vinegar. For protein, and to make this dish more of a meal, add a 15 oz can of beans, drained and rinsed. I used cannellini beans, because that is what I had in the pantry. Chick peas would be good, too. Mix it all together and refrigerate until you feel hungry.
You can adjust the seasonings to you liking by changing up the herb, adding your favorite spice blend (taco seasoning, and use black beans…hint hint hint), or using a convenient store-bought vinaigrette instead of oil and vinegar. Anyway you DIY this dish, it is cool and satisfying.
